Vegan Pizza Pancakes

Vegan Pizza Pancakes
Everyone loves pancakes for dinner and we all love pizza...but what if you combined them? I know its a crazy concept but when you think of the possibilities, your flavor combos are endless. This recipe combines the two recipes for a NEW dinner twist. Vegan, cheesy, and perfectly pizza but combined with a savory pancake. Perfect for kids or adults alike and a fun make your own dish. Great on its own or along side a salad with your favorite dressing. Serve with your favorite marinara or pizza sauce, sprinkle with fresh basil and extra vegan cheese or parmesan. Make big or small! No delivery required, enjoy!

Vegan Pizza Pancakes
Yields: 8 Large Pancakes OR more if made smaller

Ingredients
-1 to 2 Tablespoon oil or vegan butter (I used coconut shortening/oil)
-1 cup Flour
-1/2 teaspoon Sugar
-2 Tablespoons Baking Powder
-1/2 teaspoon Salt
-1 cup vegan milk
-1 teaspoon nutritional yeast
-1 teaspoon dried Italian seasoning
-1/2 teaspoon parsley, dried or fresh
-1 Tablespoon fresh chopped basil (4 big leaves sliced)
-1/8 teaspoon garlic powder
-1/8 teaspoon onion salt (or powder)
-Freshly ground black pepper, to taste
-1 cup shredded vegan mozzarella cheese (or your favorite flavor)
-1/2 cup vegan pepperoni, minced (optional)
-4 Tablespoons pizza sauce or your favorite pasta sauce, Plus extra Sauce for serving

Directions

In a food processor, mince then vegan pepperoni down to small consistency. If you don't want the vegan in the pancake, feel free remove. If you like other vegan meats, add them in as well or instead.

Combine the flour, sugar, baking powder, and salt in a large bowl and mix well. Add in herbs, nutritional yeast and remaining seasonings.

Whisk to combine the flour mixture. Add in the minced pepperoni and vegan cheese, mix to combine.

Mix in the vegan milk and sauce mixed together.

4 Tbsp Sauce
1 Cup Vegan Milk with 4 Tbsps Sauce
Stir in the liquid until the batter is blended together and smooth but don't over whip too long. Some lumps are okay. Let stand for 5 to 10 minutes until you see the mixture looking bubbly and frothy.

Add in Milk Mixture

Heat a griddle or frying man over medium high heat. Add 1/2 to 1 Tbsp oil (I used coconut shortening).

Drop 1/4 cup of batter one at a time onto the hot oiled griddle.

1/4 Cup Batter Each
When bubbles appear on the surface of the pancake, approximately 3 minute, flip and cook the other side for another 2 to 3 minutes or until both sides are golden brown and firm. Reapply oil to griddle if it gets dry.

Serve with your favorite marinara or pizza sauce and a sprinkle of fresh basil and vegan cheese. Enjoy!
