Vegan Ginger-Chili Glazed Duck

On those evening when all you want to do is order take out for those comforting Chinese food dishes, this recipe will make you hang up your phone and pick up a pan. This is a sweet and spicy dish that you will crave again and again. With a few pantry items, you can have many different Chinese food recipes whenever you want. Better for you in the long run, you know what's going into your food and you can control it all. You can fry like the recipe does here or even bake for a lighter recipe. Serve this dish with white or brown rice and your favorite veggies mixed in or on the side. Enjoy! 

Vegan Ginger-Chili Glazed Duck

Ingredients


-2 10oz can vegan peking duck, pat dry and cut into bite size pieces


Dredge 
-1 teaspoon Spanish paprika
-1 teaspoons salt
-1/2 teaspoons ground black pepper
-1 teaspoons ground ginger
-1/4 teaspoon ground allspice
-1/4 cornstarch
-1/4 cup flour

Ginger-Garlic-Chili Glaze

-2 teaspoon ginger, finely chopped
-1 1/2 tbsp garlic, finely chopped
-2 Tablespoons hot Asian chili paste
-1/2 cup agave
-2 cups vegan duck broth
-2 Tablespoon green onion, chopped
-2 Tablespoons rice wine vinegar (regular vinegar is fine also)
-1/4 cup soy sauce


Thickener
-1/4 cup Cornstarch
-1/4 cup Cold Water


Directions
Glaze
In a saucepan, set over medium-high heat. Add the ginger and garlic and fry for about 2 to 3 minutes or until fragrant  Once that's done, combine the remaining sauce ingredients in the pan, Whisk well to dissolved. Add 2 tablespoon green onions & cook. Once the mixture has cooked down for about 8 to 10 minutes, Add the cornstarch slurry (I usually add it when vegan duck is almost done). Stir as you pour because the cornstarch will thicken up VERY quickly. Keep warm over low heat or turn off if you are going to wait a while. Taste and adjust seasoning, if needed.

In a heavy-bottomed pot OR deep-fryer heat enough oil to come halfway up the sides of the pot, to 375 Degrees.

Be VERY Careful!!!

Fry the duck, in small batches, until golden and crispy, about 2 minutes. Remove the vegan duck using a wire mesh strainer and drain on paper towels. To serve, Add all your fried vegan chicken pieces into the glaze and stir until all are coated. Place the Vegan Ginger-Chili Glazed Duck on a platter and Sprinkle with 
scallions. Serve with White or Brown Rice, Add in broccoli or other veggies & Enjoy!
Note: A lot of the items listed are not ones you can find in every grocery store. You can however find most of the items at your international or oriental markets. These markets have a lot of vegetarian and vegan options. With a little patience and hunting, you can find a lot of good buys and yummy items. If you cannot find them at the market, you can also order online. Stock up and you will have plenty to enjoy for a while, happy shopping.
