Vegan Game Day Chili Bowls
Game day is all about fun! We can all agree that the next thing it revolves around is food...and a lot of it too. The whole day is enjoyed by sitting, cheering, eating, eating, eating, and routing on your favorite team. We all have our favorite dish that we enjoy over and over and one of those favs is of course chili. We all have our own recipe or favorite kind we love to dig into, but why not make just one that everyone will enjoy...but this one has a fun twist. Why not make that scrumptious chili extra special and even hand held! This recipe shows you how to take a fantastic chili and make it even better. These bowls combine everything we love about game day. Serve them with endless amounts of toppings to customize to your hearts content and paired along side your favorite game day beverage. Nothing better than serving this every time you have a game day event or just on a cold winter night over and over. Enjoy!

Vegan Game Day Chili Bowls

Ingredients

Vegan Two Bean Chili (Recipe on link) 
Homemade Tortilla Bowls (Directions below)

Additional Toppings
Organic Lettuce, shredded
Fresh organic tomatoes, chopped into bite-sized pieces
Organic Cucumber, chopped
Organic Avocado slices
Freshly-grated Cheddar or Monterey Jack Vegan Cheese (or both)
Hot sauce or Salsa (of your choice)
Vegan sour cream
Sliced black olives
Raw chopped organic onion
Sliced organic green onions
Pickled jalapeno or chile peppers

Directions

Prepare your chili the day of or even ahead of time to save yourself some time. Once made according to directions on the recipe, keep it warm until ready to serve. Once you are ready to assemble the bowl, place out buffet style to have it and the toppings ready to assemble easily. Make it fun and relaxed, its more fun this way.

How to make Tortilla Bowls

Heat oven to 325 Degrees

The recipe can be made in advance as well and it all depends on how many you want. Place flour tortillas onto an oven-safe bowls (that will hold the tortillas), sprayed with non-stick spray or grease. Lightly spray (or grease) the exposed side of the flour tortilla. Bake in the oven for 10 minutes or until the tortilla starts to puff and turn golden. Remove from oven, let cool slightly, and place on individual serving plates.

*For an extra bonus, season your shells with your favorite seasonings to make the bowls extra tasty. 

While the shells cool, get your toppings and chili ready for when you want to assemble the whole dish. 

Assembly
Place a layer of chili on the bottom of each prepared shell bowls. Then place a layer shredded vegan cheese, then of shredded  lettuce (whatever you like). Place a dollop of vegan sour cream on top of the lettuce. Lastly, top with chopped tomatoes (and/or other topping: chopped cucumbers, avocado slices, olives, etc.) 

Optional
Add some hot sauce and/or salsas on top of your bowls. 

Once you have assembled your bowls, you can change up the toppings every time you make this recipe or even the next time you go up for another helping. Serve the bowls along side your favorite game day beverage and be sure to enjoy it over and over for every game day that needs a hearty and fun kick. Enjoy!
