Whether you have been to a party, sporting event, or restaurant you know that queso dip or nachos are a popular choice to indulge in. It is a tasty, spicy, and creamy treat we pair with chips to enjoy from time to time. This recipe shows you how to make a perfectly creamy and outrageously tasty vegan queso dip that will not only impress you but have your family and friends guessing "is this vegan or not?!". Perfect paired with the homemade seasoned tortilla chips that compliment the chips in every way. Serve the queso dip hot out of the pot, keep in a crockpot for a party option, or reheat out of the fridge for future snacking. Also pairs great with your favorite vegan adult beverage. You will definitely spot plenty of smiles when you serve this at your next event. Enjoy!

Outrageous Vegan Chile Con Queso Dip
with Seasoned Baked Tortilla Chips

Ingredients

-3 Tablespoons vegan butter
-2 Tablespoons all-purpose gluten-free flour
-2 cups warmed vegan milk
-1/4 cup chopped cilantro
-5 cups grated vegan cheddar cheese
-1 cup grated jack or mozzarella cheese
-1 cup prepared organic vegan salsa (mild/medium/hot, your favorite can be use)

Optional
-2 Tablespoons to 1/4 cup diced Jalapeno peppers (pickled)

Directions
First off, shred your vegan cheese and set it aside for later use in the recipe. You can mix and match your cheeses and add anyone you like to customize your dip. 

Shredded Vegan Cheese
Melt the vegan butter in a medium-large saucepan over medium heat.

Whisk the flour into the pan and cook for about 30 seconds.

Slowly pour the warmed vegan milk into the pan while whisking, and continue to cook, whisking constantly, until the sauce has thickens, about a couple minutes. If you do not warm the vegan milk beforehand, the mixture will not turn out smooth, the heat helps dissolve the flour away evenly.

Smooth Sauce Base
Slowly add in the cheese a little at a time, stirring continuously. The cheese will take some time to smooth out. Reduce the heat to low, add in salsa and stir in to combine. 

6 Cups Vegan Cheese Blend
1 Cup Organic Vegan Salsa
Cheese Added, keep cooking
Cover the sauce with a lid, stirring occasional until it is completely melted. The mixture will take about 15 to 20 minutes to melt down. Once the mixture has melted completely, add in cilantro and optional jalapenos. 

*If you want it spicy, add jalapenos or leave out for mild. You can also seperate the dip at the end and make half spicy and half regular for family & friends.*

Ready to Serve Smooth Dip
Serve immediately with tortilla chips. Leftovers (if you have any!) can be refrigerated and then reheated when you're ready to serve again. Enjoy!

Ready to Serve Vegan Queso Dip & Chips

Seasoned Baked Tortilla Chips

Ingredients

-12 organic flour or corn tortillas, each cut into wedges
-Oil or Oil spray, enough to coat evenly
-1 teaspoon salt
-1 teaspoon ground cumin
-1 teaspoon garlic powder
-1/2 teaspoon onion powder
-Freshly ground black pepper, to taste
-1/2 teaspoon chili powder
-1 teaspoon dried parsley or cilantro

Directions
Heat oven to 350 Degrees

For this recipe I used extra large (burrito style) tortilla and made big chips. You can use small, medium, or large tortillas. The bigger ones are really great for parties and make them look "fancy" and/or special. 

Spread the tortilla wedges onto a baking sheet. Spray or coat evenly with oil, turn and spray the opposite side. You want to make sure the chips come out nice and crunchy. Combine the salt and other seasonings. Sprinkle over the tortillas.

Seasoned and Oiled Chips
Once added to the tortillas, I like to mix them around to evenly coat the chips and then spread out again on the sheet tray.

Bake in the oven 20 to 30 minutes. The finished tortillas should be browned and crispy.

Cool on a rack and then serve with dip. Enjoy!
