PB&J is a delish treat whether you are a kid or an adult. We have grown up with it and enjoy to indulge from time to time. This also is the same for fudge, we all have had it and we all love to treat ourselves with some every now and then. What if you combined the two? Yes it is a wicked idea and I'm just the lady to try, what a comfort. This recipe combines those two comfort foods and makes your mouth water at the same time. A great and easy recipe for anyone looking for a quick dessert. A perfect recipe to have kids help with and a perfect gift for anyone you love. You can't go wrong when you make it and no one will be able to resist, vegan or not. Serve in small squares and keep in the fridge for best results. Just don't forget PB&J's perfect partner...vegan milk! Enjoy!
Vegan PB&J Fudge
Ingredients
-3/4 cup vegan margarine or butter
-1 cup peanut butter
-4 cups confectioner sugar
-1 cup rice allow creme spread
-1 teaspoon vanilla extract
-1/2 cup vegan jelly, jam, or fruit preserve (any flavor)

Directions
In a saucepan over low heat, melt vegan butter.
Once the butter has melted, remove from heat and whisk in peanut butter until smooth.
In a stand mixer I add the peanut butter mixture to the bowl. Add in vegan marshmallow and vanilla and mix.
Stir in confectioner sugar, until well blended.
Take this now formed mixture and pat into pan, if there is any excess butter or grease, dab with paper towel until all is absorbed. Lastly, spread on your favorite jam evenly over the formed fudge.
Allow the fudge to set in the fridge for at least 2 hours or overnight. Once set, cut into small pieces and serve. Store remaining fudge in an airtight container in the fridge. Enjoy!
