Summery Vegan Peach & Blueberry Crumble

Summery Vegan Peach & Blueberry Crumble
Summer ingredients are indeed plentiful and we always seem to have leftover fruits we won't be able to use in time. They can get soft or mushy and we think that's the last of them, but you can turn those left behind fruits into a delish dessert you could serve at any fancy dinner party. This recipe takes those ripened fruits and adds them to a classic dessert dish perfect for the summertime. With its sweet and savory crumble and the juicy filling, you will wish your fruit would ripen sooner so you can make this recipe ASAP. Serve it hot out of the oven with vegan ice and/or whipped cream or cool and plain, there are no wrong ways to eat this crumble. Just remember to leave some for your family or guest...its only fair. Enjoy!

Assemble & Baking
Take your processed crumble and dump it on top of the waiting peach mixture. Break up any large pieces and even spread out. Sprinkle the remaining tablespoon of sugar evenly over the top of the crumble. This will give the crumble and nice crunch and flavor.

Crumbled Topped Filling
Bake until the crumble is golden brown and the fruit filling is bubbling around the edges, about 35 to 45 minutes. Once it is done, remove from the oven and allow to cool on a wire rack for at least 15 minutes before serving.
