Summery Vegan Peach & Blueberry Crumble
Ingredients
-4 cups fresh or frozen peaches, peeled, pitted and cut into wedges 1/2-inch thick slices-1/3 cup granulated sugar & 1 Tablespoon for baking
-2 Tablespoons Agave or your favorite syrup
-2 teaspoons cornstarch
-2 Tablespoon lemon juice
-1 teaspoon lemon zest
-2 Tablespoon orange juice
-1/8 teaspoon salt
-1 cup blueberries
For the Crumble
-1/4 cup sugar
-1/4 cup old fashion oatmeal
-1/4 cup light brown sugar
-1/4 cup walnuts, chopped, any nut can be used or leave it out if allergy
-1/8 teaspoon ground cinnamon
-Pinch nutmeg
-1/4 teaspoon salt
-1 teaspoons vanilla extract
-6 Tablespoons vegan butter or shortening, at room temperature
Heat oven to 375 Degrees
Filling
In a large bowl, add all your ingredients except blueberries, 1 Tbsp sugar, and cornstarch. Toss this mixture with the juice mixture that is in the bowl to coat all the peaches.
Once the peaches are mixed, gently fold in the blueberries. Lastly add in the cornstarch and toss to dissolve the cornstarch in the mixture.
Once everything has been combined transfer the fruit mixture to a 2-quart baking dish.
Crumble
In a medium bowl or food process, add all your ingredients. Blend it together until a crumbly mass forms.

In a medium bowl or food process, add all your ingredients. Blend it together until a crumbly mass forms.
Take your processed crumble and dump it on top of the waiting peach mixture. Break up any large pieces and even spread out. Sprinkle the remaining tablespoon of sugar evenly over the top of the crumble. This will give the crumble and nice crunch and flavor.
Bake until the crumble is golden brown and the fruit filling is bubbling around the edges, about 35 to 45 minutes. Once it is done, remove from the oven and allow to cool on a wire rack for at least 15 minutes before serving.
Serve in a bowl plain or with vegan ice cream and/or vegan whipped cream. Enjoy!
