Vegan Tapioca Pudding

Vegan Tapioca Pudding
A traditional comforting dessert that I think almost everyone grew up with was Tapioca Pudding. Often thought of as elderly mushy pudding, this recipe will turn anyone's head and make them think twice about what they thought tapioca pudding can be. This traditional pudding turned vegan will satisfy anyone's craving for tapioca and have them asking for seconds...and maybe thirds. Always delish served with extra cinnamon and maybe some fruit, you will enjoy this abundant recipe over and over again. Enjoy!

Vegan Tapioca Pudding

Ingredients

-3 1/2 cups vegan milk
-1 1/2 cups coconut milk
-6 Tablespoons Tapioca (Instant)
-3/4 cup sugar
-1/2 Tablespoon Vanilla
-1/8 teaspoon cinnamon
-1/8 teaspoon salt
-Pinch nutmeg
-6 Tablespoons Cornstarch
-2 Tablespoons vegan butter

Directions

In a large saucepan combine sugar, tapioca, coconut milk, and 2 1/2 cups of you vegan milk. Stir and let sit for 5 minutes.

While the tapioca mixture sits. In a small bowl, whisk together 1 cup vegan milk and the cornstarch until no lumps and smooth. Set this cornstarch mixture aside for when you will need it.

When your tapioca mixture has set for 5 minutes, place it on a medium heat, stirring constantly until the mixture comes to a boil. Boil for 2 to 3 minutes. After the 2 to 3 minutes, add cornstarch mixture. Cook, stirring to combine, until mixture begins to thicken. Once mixture has thickened, turn off heat and remove the pan from the heat, add in butter and combined. Store pudding in a large container, the pudding can be eaten cold or hot. Sprinkle with a little more cinnamon before eating and Enjoy!

  2. Hi Debra! I think it would work out great. The consistency may be thicker being that the coconut milk is thicker but the flavor will be great. Hope you enjoy it! :)
