Vegan "Lucky Charm" Rice Krispie Treats

If you're like me, you grew up enjoying the sugarier things in life, e.g. Lucky Charms, Captain Crunch, Trix...you see where I'm going here. Now some of these cereals are still conveniently vegan but not all of our childhood favorites are. Well one of those cereals that my husband enjoyed the most was Lucky Charms, I'm sure many of you feel the same way. There isn't a real substitute out there for us...get on that major brands ASAP! Now I wasn't the biggest fan (don't hate me) but what I did love, Rice Krispie Treats. I can remember my mom packing them in my lunch almost daily if I was REALLY lucky! The down side to most of those cereals now that I'm an adult, the dyes. I realized all those dyes weren't the best for me and I really don't want to feed them to my kids. I know, I know folks, adulthood...sigh. Who wants to go back to the days of not caring and Saturday morning cartoons? Me too! 

This recipe combines the two things that each my husband and myself loved about the treats of our childhood. What helped was finding amazing products to make that happen. With simply searching and some helpful links, they can be yours as well! Who's ready for some sugar?! You'll never miss those yucky dyes! Who would miss dyes anyway...WEIRD! So pull up a bowl, grab your spatulas, and let's get ready to take a trip to the past. Make sure you grab those leg warmers and scrunchies...Sorry if you're a guy in this scenario, you can come too. 

*I want to note that these are amazing for holidays, especially Easter or any spring and summer event. They're so colorful, bright, and happy. Perfect in little squares or cut out with cute cookie cutters to go with your holiday themes. They're not just for the kids, adults will love them too.*

Vegan "Lucky Charm" Rice Krispie Treats

Ingredients

• 4 cups Organic Puffed Rice Cereal OR Rice Krispies cereal (To Make GF: Use GF Rice Krispies)
• 2 cups Bitsy's Superfood Cereal (if you can't find this brand, use any fruit or plain alphabet type cereal you like) 
• 1 package Dried Vegan Marshmallows (Sweet & Sara Brand)

• 6 Tablespoons Vegan Butter

• 5 1/2 cups Vegan Marshmallows (regular sized) *I used Sweet & Sara's*

Optional Add-In: Natural Vegan Spinkles and/or Mini Vegan Chocolate Chips 

Directions

Grease a 9×13-inch pan and set aside.

Melt the butter in a large pot over medium-low heat. Add the marshmallows and stir until completely melted. 

*I used a double boiler technique but you can dump it into a pot and melt the regular way, it's also faster.*

 

Reduce the heat to low (or off the heat) and stir in the cereals and Dried Vegan Marshmallows pieces (optional add ins as well, if using).

A Mix Of All The Cereals Prepped Ahead

Turn the mixture into the prepared pan and press into an even layer. Using buttered spatula or wax paper evenly press mixture into 13 x 9 x 2-inch pan coated with cooking spray.

Allow to set at room temperature until firm, 30 minutes to 1 hour. Cut into squares (or use cut outs for fun festive shapes!) and serve. Store leftovers at room temperature in an airtight container for up to a week.

 

The Dried Vegan Marshmallows are also great mixed into your cereal the regular way!
