Vegan Chewy Choco-Choco Chip Cookies
CHOCOLATE! Need I say more? ...Okay okay, well then. This cookie is in a class all its own, its a cookie, its chocolate, and its like a cookie and a brownie had a love child and blessed the world with it. Too much? Well when it comes to chocolate, you can NEVER have too much folks. This recipe shows you, vegan or not you too can enjoy chocolate anytime, anywhere. A perfectly chewy and decadent little cookie that will have you asking for not only some vegan milk..but a hanky to dry those tears of joy. A lovely cookie for parties, kids, bake sales, and/or just family enjoyment. Best paired with a BIG glass of vegan milk. You are sure to be sneaking maybe one or two more cookies while enjoying these.

Vegan Chewy Choco-Choco Chip Cookies

Ingredients

-1 1/4 cup vegan butter/margarine/or shortening
-2 cups sugar (I used organic pure cane sugar, use your favorite)
-2 Tablespoons Soy Milk
-1 Tablespoon Vanilla
-2 large "Eggs", Egg replacer powder or The Vegg (prepared as followed on your directions: 1 tsp & 1/4 hot water)
-1 teaspoon Baking Soda
-3/4 cup vegan cocoa powder
-1/2 teaspoon Salt
-2 cups Flour
-2/3 cup Vegan Chocolate Chips or Chunks
(I used mini vegan chocolate chips, you can always add 1 cup)

Directions

Heat oven to 350 Degrees

Combine vegan butter/shortening, sugar, milk, and vanilla in electric stand mixer, beat at medium speed until blended and creamed.

Add in your egg substitute and beat in.

Combined Wet Ingredients
Combine flour, cocoa powder, salt, and baking soda in separate bowl.

Combined Dry Ingredients
Once your ingredients are all in separate bowl, add and beat into the vegan butter mixture until blended but not over beaten. Stir or lightly mix in vegan chocolate chips.

Ready to Scoop Dough
Drop rounded 1 Tbsp measured cookie dough 1 to 2 inches apart onto greased baking sheet. For measuring I used a small ice cream scoop. If you don't have an ice cream scoop, use a tablespoon measure or spoon.

Ready to Bake Cookies
Bake 15 minutes for a chewy cookies.

Goes in the Oven in Batches 
Ready to Cool Cookies
Take out of the oven once cooked and transfer them immediately from the baking sheet and to a rack or parchment paper to cool completely. Serve them with a big glass of vegan milk and enjoy!
