Vegan Philly Cheesesteak

Vegan Philly Cheesesteak
It's hard to think of Philadelphia without thinking of cheesesteaks! A sandwich containing sliced steak, melted cheese and sometimes peppers, onions & mushrooms. Usually a sandwich we don't associate with being vegan. This recipe shows that not only can a cheesesteak be vegan but also down right craveable. With sliced seitan, vegan cheese, and plenty of veggies to fill your tummy with. All you need is to serve it along side your favorite beverage and sides. Sure to be your new craveable meal, even if your not in Philly, you can still enjoy a meal now vegan inspired by the city. Enjoy! 

Vegan Philly Cheesesteak

Ingredients
Veggies
-2 teaspoons Olive oil 
-1 Red Bell Pepper, sliced
-1/2 Green Bell Pepper, sliced
-1 small red onion, sliced 
-1 cup sliced shiitake mushrooms
-1/4 teaspoon paprika 
-1/8 teaspoon garlic salt
-1/2 teaspoon ground cumin 
-2 teaspoons Nutritional Yeast
-Couple Pinches Cayenne powder (Optional) 
-Salt and freshly ground black pepper, to taste
-1/2 to 1 cup water 

Seitan 
-2 teaspoons olive oil 
-6 to 8 sliced of seitan (store bought or homemade) 

Side Ingredients
-1 cup freshly grated Daiya Cheese (1/2 cup Jack & 1/2 cup cheddar) 
-Hoagie rolls, split open
-1 Tablespoon water (for steaming) 

Directions

Before you get started cooking the other ingredients, you can toast your hoagie in a dry saute pan or large toaster until lightly toasted (Optional).

Heat a medium saute pan with 2 teaspoons oil over high heat. Add the peppers, onions, and mushrooms, cook for 5 minutes sauteing and stir occasionally. 

Slightly Sauteed Veggies
After the 5 minutes, add all the seasonings and nutritional yeast, stir and add in the 1/2 cup water and cover with lid to trap in the steam and cook for 10 to 15 minutes. Saute the mixture, adding in more water if needed (another 1/2 cup) to soften the mixture but still with a slight bite, not mushy. Once the mixture is done, remove from heat and place in a separate bowl to use when the Cheesesteak is ready to assemble.

In the same emptied pan, heat 2 more teaspoons of oil and place several slices of the seitan to slightly fry and heat through. Cook for 3 to 5 minutes of medium-high heat. Once it is done, arrange the seitan on top of the others in a long row to fit the hoagies.

Once your seitan is arranged, spoon your veggie mixture on top of the seitan (evenly distributed).

After the veggies are place, place 1/2 cup of the grated vegan cheese over the top of the mushrooms, onions, and peppers and seitan. To melt the vegan cheese, add 1 Tbsp of water in the saute pan (in the empty spaces) and place the lid on for 2 minutes to steam and melt the cheese.

Once your vegan cheese has melted, place the 1 half of your hoagie roll (toasted or plain) on top of the vegan cheese to stick.

Using a spatula, flip the hoagie over and place the other half of the hoagie on top. 

Assembled Cheesesteak
At this point you can slice it or serve it whole on a plate with your favorite sides and beverage, Enjoy!
