Vegan S'more Sandwich Cookie Bars
When you think summer time, you think dessert and my mind always wanders to S'mores. S'mores are the definition of summer, fun, camping, messiness, and pure joy. It is an ooey gooey treat that kids and adults alike love to indulge in over and over again, sometimes more than one...or three! This recipe combines that ooey gooey goodness that is a S'more and pairs it with a yummy cookie, to make a super easy and perfect S'more in cookie form. This recipe will be great to make for any summertime party, BDays, or make for your family when they want that S'more but you want to leave out the fire and sticks. Perfect for kids but you have to remember to share because this recipe will become your new craving. Serve with your favorite summertime beverage or vegan milk and enjoy!

Vegan S'more Sandwich Cookie Bars


-1/2 cup softened vegan butter
-3/4 cup sugar
-1/4 cup prepared The Vegg or 3 eggs with Egg Replacer Powder
-1 teaspoon vanilla extract
-1 1/3 cups all-purpose flour
-3/4 cup vegan graham cracker crumbs
-1 teaspoon baking powder
-1/4 teaspoon salt
-1 1/3 cup Vegan Chocolate chunks or chips ( I use Enjoy Life Foods)
-2 cup vegan marshmallow creme or Vegan Mini Marshmallows

Heat oven to 350 Degree 

Get your 8-inch square baking pan ready to fill. I didn't have to grease my pan but if you are using a stainless steal, aluminum, you may need to grease it before baking.

Beat vegan butter and sugar in large bowl until light and fluffy. Add The Vegg (or prepared egg replacer powder) and vanilla, mix all the ingredients well until combined.

Stir together flour, graham cracker crumbs, baking powder and salt and add to vegan butter mixture, mixing until completely combines.

Once you have your completed cookie dough, press half of dough into prepared pan evenly. On top of your pressed cookie dough. add the vegan chocolate chunks.

Then add your vegan marshmallow creme (or marshmallows), around evenly.

Place the remaining cookie dough on top of the marshmallow. It will take a little patience, but scatter it around carefully and press to form a layer.

Bake this for 35 minutes or until lightly browned. 

Baking Cookie 
Take out of the oven and cool completely in pan. Once it has cooled, Cut into bars. Serve with vegan milk and enjoy...NO Stick Needed!

Homemade Vegan Marshmallow Creme


-1 1/2 cups powdered sugar
-3/4 tsp xanthan gum powder
-4 Tablespoons soya protein
-3/4 cup cold water
-3 teaspoons white vinegar
-1 tsp vanilla
-2 Tablespoons soya protein


In a small bowl whisk together the powdered sugar, xanthan gum and the 4 Tbsps soya protein. Set aside.

Powdered Sugar Mixture
In a kitchen aid mixer fitted with a whisk attachment, place the water, vinegar, vanilla and 2 Tbsps soya protein in the mixing bowl.

Whisk on high speed for 10 minutes until it becomes fluffy and bubbly, it will get a bit lighter. 
(the highest setting on your mixer)

Whipping Mixture until Frothy
Once the mixer is done whisking for 10 minutes you are ready to add the powdered sugar mixture. Keeping the whisk on high add the powdered sugar mixture, a heaping 1 Tbsp at a time. This mixture will eventually turn white and leave stiff peaks when the whisk is lifted out of the mix. It will be the consistency of marshmallow creme. This sticky and delicious vegan marshmallow creme can be used in the above recipe, it makes about 3 cups. You can also use this or the leftovers for sandwiches, eating, or vegan hot chocolate.
