Vegan Hot Spinach-Artichoke Dip
Going out to dinner we always look for appetizers that will give us that yummy before dinner feeling. One of the most popular starters has got to be spinach & artichoke dip but for vegans out in the town, we usually can't partake on this treat being that its full of eggs, cheese, and milk. This recipe shows that spinach & artichoke dip can not only be vegan and delish but will make any none vegan shocked they are enjoying a vegan appetizer this good. Make or take this to a party, great for any special occasion, or impress your family with a special dish before dinner. This will make them forget about the main course and having them asking for more! Serve with your favorite chips, veggies, and beverage, get ready to enjoy your appetizer at home. Vegan Hot Spinach-Artichoke Dip

Ingredients


2 cups frozen chopped spinach
1 cup whole artichoke hearts, quartered and halved (frozen or canned)
1/2 cup vegan mayonnaise
1 8oz container vegan cream cheese
1 1/2 cup freshly grated vegan cheese (Daiya cheddar was used in this, but jack would be great)
1/2 a large lemon (juiced) 
1 1/2 teaspoons thinly sliced scallions
1 garlic clove, grated or finely minced
1 teaspoon vegan Worcestershire sauce 
1/4 to 1/2 teaspoon red pepper flakes (optional, depending if you want spice) 
Salt & Freshly Ground Black Pepper, to taste
1/2 Tablespoons fresh or dried Parsley

Directions


Heat the oven to 375 Degrees and get a casserole or baking dish ready. 

In a bowl combine vegan mayo, vegan cream cheese, and scallions in a large mixing bowl.

1st Step to Dip Ingredients Ready
On a cutting board quarter and halve your artichoke hearts and measure 1 cup.

1 Cup Chopped
Artichoke Hearts
On a separate plate, grate chilled Daiya wedges until you get 1 cup.

1 Cup Freshly
Grated Vegan Cheese
Combine all the rest of the ingredients except the 1/2 cup vegan cheese in a large bowl, you want to have some to go on top. Stir the mixture well to mix everything nicely. 

Mixed Dip Ingredients
Scrape into the prepared casserole dish and sprinkle the remaining vegan cheese and put parsley on top to garnish. 

Pre-Baked Arranged Dip
Bake for 20 to 30 minutes at 375 Degrees until melted, heated, and bubbly. 

Dip Baking in Oven
Once baked completely, remove from the oven and let sit for 5 to 10 minutes to cool a bit. Serve with your favorite chips, veggies, and beverage. Enjoy!
